Our beef comes from South Poll cattle, a breed specifically developed for grass-based, regenerative systems. They thrive on pasture, handle heat well, and produce beautifully marbled beef without grain finishing.

We chose South Poll cattle because they align with our values: efficient grazing, calm temperaments, and exceptional meat quality — all while improving the land they’re raised on.

    Animals are humanely harvested at Stone Mountain Meats facility. The carcass is then transported to PJ's Market facility for cut and wrap.
  • Appalachian Producers Cooperative
    Harvesting, cut, and wrap are completed in one facility.
  • Both facilities offer USDA certified processing.

When your pork is scheduled for processing, you’ll have a few choices to make about how certain cuts are prepared — especially bacon and sausage. If this is your first time buying pasture-raised pork, you’re not expected to have all the answers.

Bacon Options:
You can typically choose between:

  • Cured & Smoked Bacon – Fully seasoned and smoked by the processor, ready for your freezer and skillet
  • Fresh Pork Belly (Uncured Bacon) – Pork belly left unseasoned for those who prefer to cure, smoke, or season at home

Sausage Options:
You’ll usually have the option to select:

  • Seasoned Sausage – Traditional seasoning blends prepared by the processor

Yes. Our Jersey heifers are selected and confirmed for theA2/A2 beta-casein gene, making them a popular choice for families seeking milk that many find easier to digest.

Are these cows bred or open?

These offerings are bred heifers, meaning they have been exposed or confirmed bred and are intended to freshen for their first lactation after placement with their new family.

Have they been milked before?

No. These are first-calf heifers and have not been previously milked. This allows families to establish their own routine and handling from the very beginning of the cow’s milking journey.

What kind of temperament can I expect?

Temperament is a top priority in our selection process. Jerseys are known for being:

  • Manageable in size

While every animal has its own personality, we prioritize calm, respectful handling from an early age.
